And if you want a delicious variant, we suggest you add more or less ginger depending on how spicy you like it. If you are a particularly daring type, exaggerate a little: it will give you a touch of very personal aftertaste, to be combined with your inimitable recipes!
Having clarified the above, let's try to understand how you can prepare the zucchini jam, starting with a look at the ingredients which are necessary for this purpose.
In particular, you will need:
- 1 kg of zucchini, coarsely grated;
- 1kg of granulated sugar;
- a little ginger, peeled and finely diced, in quantities to your liking;
- 3 lemons, lemon juice and zest;

Once you have the necessary ingredients, we can move on to understanding how to make homemade zucchini jam. Don't worry, because the steps are really very simple, and surely after a few minutes you will be able to metabolize them all correctly, taking big steps towards the desired final result!
As for the method, put everything (except the jars to be filled) in a large pot with a heavy bottom. Wash the jam jars with warm soapy water to remove any residue. Then, mix all the ingredients with your hands, doing it with particular calm and energy: you will probably see a lot of moisture being removed from this compound, considering that zucchini has an abundance of it, and that the sugar will begin to dissolve. So don't worry if there are “liquids” leaks, because that's exactly what will happen as you proceed with the mixing of the ingredients!
Put it all in one pot on fire bass, and proceed to stir until the sugar dissolves completely. Increase the heat to medium-high and remove any type of foam that forms and rises to the top. Take a small dish and place it in the freezer, ready for the next step: place the jars where to prepare the jam, previously cleaned, and the relative lids, in an oven at 120 degrees to heat and sterilize them, until the jam is ready.
When the jam looks thick and shiny, it's ready for the next step! Before you act too quickly, however, do a simple check: drag the spoon along the bottom of the pan and check if the mixture separates easily, showing the bottom of the pan.
So take the mixture and put it on the cold plate that we mentioned not too many lines ago. If the mixture bends a little when touched, it's ready! If not, cook the jam a little more until it is ready, and carry out this simple test again.
Once this is done, let your jam cool and taste to check the flavor. Add a lemon or ginger zest if you wish, depending on the spicy and sour flavor you think you want to get from this gorgeous and yummy recipe!
Once you have also completed this step, all you have to do is pour the mixture into the jars, which will obviously still be hot. Fill to the top of the container, and screw the lids tightly while the mixture is still hot.
