This tropical plant is native to East Africa and India and is currently widespread throughout Latin America. The tree produces brown pods (those visible in the photo above), popular forpropertydigestive. Despite its distant origins, theproperties of tamarindthey were known in Italy since the dawn of time. This plant and its properties were already mentioned by Pietro Andrea Mattioli, in the Salerno Medical School, the first and most important medical institution in Europe in the Middle Ages (11th century). How is tamarind sauce used? In South India, thetamarind pasteit is used to prepare a vegetable soup which, if necessary, is enriched with seafood, shellfish and meaty fish such as monkfish.
This soup is a typical dish known asSambar, also writtenSambhar or sambaar. The basic ingredient is the tamarind sauce. The soup, enriched with the most disparate ingredients, can also be used as a condiment for white rice, as shown in the photo below.
You can use thetamarind pastefor a good legume soup. In this recipe we offer you a chickpea soup, but you can also use beans, in a variant of the classic bean soup. Here is the recipe for using thetamarind paste:
- 2 cups of already hydrated chickpeas (soaked overnight)
- 2 finely sliced sweet onions
- 1/4 cuptamarind paste
- 1 teaspoon of cumin powder
- chopped dry chilli
- 4 tablespoons of extra virgin olive oil
Boil the chickpeas with an onion and the spices. Enrich the tamarind sauce with a few tablespoons of the water from the chickpea cooking. Drain the chickpeas. Blend the onion and spices, set them aside. Drain the chickpeas.
Chop the onion and fry it in hot extra virgin olive oil. Add the chickpeas and add more of the liquid from the cooking of the chickpeas, the quantity depends on your preferences (how much soupy times ?!). Then add the tamarind sauce. Bring to a boil, add the onion blended with the spices.
Add the chilli and serve hot, perhaps with toasted pieces of bread.
